Last June , my sister and I packed our bags and hopped on a plane and left for the US to visit our sister and brother in law. We touched down in Florida and after a week and a half in FL, we flew in to New York to visit my Aunt and of course, see this much raved about city. I felt really blessed to have seen the city, people, lady liberty, Times Square, Magnolia Bakery and more. Just want to share few of my photos from that trip a few months back.
Lo and behold! These easy to make peanut butter oat balls can be your go-to "healthy" snack. I consider them a healthier option whenever I feel like eating something sweet out of boredom. I am such as sweet tooth but unfortunately, all of the sugar I consumed from those cupcakes, cakes, chocolate bars are all on my hips now.
As part of my happy project mission, I vow to make better food choices--sweets and desserts included. Hope you can join me in this wellness journey. It is really difficult to cut out sugar but well, WE CAN DO THIS! We have to gradually cut it out so our bodies won't get shocked and become weak. So in this snack recipe, I tried my best to create a healthy yet delicious treat to munch on.
DARK CHOCO HAZELNUT PEANUT BUTTER OAT BALLS
Ingredients
1 cup Whole Wheat dry Oats
3/4 cup Jiff Extra Crunchy Peanut Butter (slightly sweetened)
1 tsp Vanilla Extract
1/2 tbsp dark cocoa powder-- I use dezaan cocoa powder
1/4 cup honey (can be less or more depending on your taste)
1 tbsp almond milk or any milk to bind
1/2 cup desiccated coconut
2 tbsp Nutella
Procedure
1. In a large dry bowl, mix oats, desiccated coconut, cocoa powder until combined.
2. Add peanut butter, Nutella, honey, milk, and vanilla extract.
3. Mix until the mixture is wet and sticky enough to be rolled into balls.
4. Place in a container and chill until slightly dry and hardened.
5. Makes 16 pcs of medium sized oat balls.
Note:
-Add hazelnuts or any peanut bits you prefer if you will be using Smooth peanut butter or those without peanut bits.
- Add more honey to make it stickier if needed.
- Feel free to add or reduce some of the ingredients to your liking. You can even add more such as dried fruits, dark chocolate chips and the like. Go Creative! But not too much as we are trying to reduce as much refined sugars as possible. =)
This recipe is still in the trial and error stage. Feel free to suggest how we can make it more delicious!
